Microwave Mini-Cakes: How to Make Chocolate Mini-Cakes in the Microwave

Learn how to make chocolate mini-cakes in the microwave.  It's simpler than you think!


This recipe has a few more ingredients than our other microwave recipes.  But it's well worth it for these delicious treats.

Let's make some cakes!


Supplies needed:

  • Butter or coconut oil, 2 tablespoons
  • Milk, 1 tablespoon.  This can be cow, goat, almond, coconut, or any other type of milk.  Dairy milks will make the cake extra creamy.
  • Vanilla extract, 1 teaspoon
  • Egg, 1
  • Cocoa powder, 1 tablespoon
  • Honey, 1 tablespoon.  Maple syrup or agave nectar can also be substituted.
  • Flour, 1/4 cup.  Any type of flour will work, including gluten-free and other alternative flours.
  • Baking soda, 1/2 teaspoon
  • Microwave
  • Microwave-safe bowl
  • Fork or whisk
  • Toppings of choice like hot fudge, berries, mint leaves, chocolate chips, peanut butter chips, sprinkles, icing, etc.

Procedure:

1. Melt the butter in the microwave-safe bowl.  Microwave it for about 30 seconds to melt it.  If using oil, skip this step.


2. Whisk egg, honey, and oil or melted butter together.  This should be done in your microwave-safe bowl.  See this article for information on which materials are microwave-safe.  The whisking can be done with a whisk or a fork.


3. Add milk and vanilla extract to the mixture.  Stir to combine.


4. Add the remaining ingredients.  Stir in the cocoa, flour, and baking soda.  All ingredients should be in the bowl now.


5. Microwave until the mixture has a cakelike texture, about 1-2 minutes.  I recommend microwaving for 1 minute to start.  If the mixture is not cakelike after 1 minute, microwave for 30 seconds at a time until it is.


6. Add toppings.  Carefully remove bowl from microwave and add toppings.
